I love avocado toast and according to social media many other people do as well! No wonder it’s become so popular over the years, this recipe has everything going for it, it’s easy, fast, delicous and healthy.
This particular recipe is a little twist on a classic dish. I decided to change things up a bit a make this toast a little extra with some hummus and beetroot. This recipe is designed to inspire you, there are countless options when it comes to avocado toast and there no right or wrong.

I feel like all of a sudden avocado toasts we’re all over my feed. But what was really new ? Avocado’s had always been around and so had toast… so what was all the hype about ?
Well the trend mainly emerged among health-conscious and food trend enthusiats. The reasons why this recipe gained in popularity are the following :
- Avocado boom: while avocado’s have always been around it seems like the awareness around it’s health benefits have only been very recent. Avocado’s are rich in healthy fats, vitamins, and minerals. The fact that they have a creamy texture and a mild flavor makes it a great ingredient for sweet and savory dishes.
- Food culture and emerging trends : plant based diets have become increasingly popular, and avocados have become a go-to ingredient for healthy and satisfying meal options.
- Social media : The beautiful vibrant green color of the avocado make it very aesthetically pleasing and a great subject for photos and posts, thus making it viral on social media.
- Café culture : Trendy cafes and restaurants started making avocados toasts adding to the popularity of this dish.
Avocado toast with a twist

Avocado toast is easy, simple, fast, delicous and healthy! I love to eat this kind of meal, during lunch time especially in summer time. It’s so refreshing.
This version is very easy to make, extra tasty and has a very nice pop of color.
INGREDIENTS
This recipe doesn’t require many ingredients and all you need is the following :
- Bread : common choices of bread include whole wheat, sourdough or multigrain. You can choose any bread of your liking. That being said, I would avoid breads that are too soft such as “brioche”.
- Avocado : you will need ripe avocados.
- Hummus : I bought my hummus from my local store, but you could also make your own homemade.
- Beetroot powder : The beetroot powder I used was homemade, but you could use store bought beetroot powder.
- Salt
- Pepper
- Toasted pecan nuts (optional)

STEP 1
Cut your bread is even slices of approximately 1.5 cm thick (0.6 inches). Toast the slices until golden.
STEP 2
Mix the beetroot powder to the hummus. You want to mix enough beetroot powder to give the hummus a nice deep pink color.
STEP 3
Spread the hummus and beetroot on your toast.
STEP 4
Cut your avocado in half and cut even slices.
Add the cut slices on your toast.
STEP 5 (Optional)
Toast the pecan nuts, they are ready when they smell toasted and have just started to color (careful not to burn them). Add the pecan nuts as a topping.
STEP 6
Add seasoning to your toast and the toasted pecans if you wish.

Equipment
- 1 Knife
- 1 Cutting board
- 1 Spoon
- 1 Bowl
Ingredients
- 1/2 Avocado
- 3 tbsp Hummus
- 1 tsp Beetroot powder (optional)
- 1 slice Bread
- Salt and pepper
Instructions
- Cut your bread is even slices of approximately 1.5 cm thick (0.6 inches).
- Mix the beetroot powder to the hummus.
- Spread the hummus and beetroot on your toast.
- Cut your avocado in half and cut even slices. Add the slices to your toasts.
- Optional : toast the pecan nuts and add them as a topping.
- Season to taste.
