Summer Cucumber Salad Recipe

As the temperature rises and the sun graces us with its warmth, there's nothing quite like a light and refreshing cucumber salad. After all nothing else screams refreshing, as much, as cucumber does.
This recipe combines the crunchiness of cucumbers with the creaminess of yogurt. This recipe is a perfect addition to your summer menu, as a side dish or as a starter.

Ingredients
  

  • 2 Cucumbers large
  • 1 cup Plain Yoghurt
  • 1 Garlic clove
  • 2 tbsp Lemon juice
  • Salt and Pepper to taste
  • 2 tbsp Dill fresh
  • 1 tsp Thym dried

Instructions
 

  • Start by washing the cucumbers thoroughly and slice them into thin rounds. You can also peel the cucumbers partially or completely depending on your preference.
  • Mince the garlic thinly, and chop the dill.
  • In a mixing bowl, combine the plain yogurt, minced garlic, the thym, the lemon juice, and dill. Stir well to ensure that the flavors are evenly distributed.
  • Gently fold the sliced cucumbers into the yogurt mixture until all the cucumber slices are well coated.
  • Sprinkle the salad with salt and freshly ground black pepper to taste. Keep in mind that cucumbers have a high water content, so a touch more seasoning might be needed to bring out the flavors.
  • Once everything is combined, refrigerate the salad for at least 30 minutes before serving.
